- 4 bone-in chicken thighs
- 4 shallots, halved
- 200ml dry white wine
- 200ml double cream
- 3 tbsp fresh tarragon, chopped
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- Salt and pepper to taste

Season chicken thighs generously with salt and pepper.
Heat butter and olive oil in a heavy pan. Brown chicken skin-side down for 6 minutes until golden. Flip and cook 4 more minutes. Remove.
Add halved shallots cut-side down. Cook 4 minutes until caramelized. Add garlic, cook 1 minute.
Deglaze with white wine, scraping up browned bits. Simmer until reduced by half.
Stir in cream, Dijon mustard, and half the tarragon. Return chicken to the pan.
Simmer covered for 15 minutes until chicken is cooked through. Finish with remaining fresh tarragon.
