- 8 bone-in chicken thighs
- 2 tbsp olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 400g crushed tomatoes
- 150ml red wine
- 1 red bell pepper, sliced
- 100g black olives
- 2 tsp dried oregano
- 1 tsp dried thyme
- Fresh basil for garnish
- Salt and pepper to taste

Season chicken thighs with salt and pepper. Brown skin-side down in olive oil for 5 minutes. Flip and brown 3 more minutes. Remove and set aside.
In the same pan, cook diced onion and bell pepper until softened, about 5 minutes.
Add garlic, oregano, and thyme. Cook 1 minute until fragrant.
Pour in red wine and scrape up browned bits. Simmer 2 minutes.
Add crushed tomatoes and olives. Stir to combine. Return chicken to the pan, nestling into the sauce.
Cover and simmer on low for 35–40 minutes until chicken is tender and sauce has thickened. Garnish with fresh basil.
